Ingredients to make baked meatballs in Spanish sauce:

1. We prepare all the ingredients for meatballs. We choose veal meat, although you can also opt for a mixed and pigs mixed. You can replace cherry tomatoes with two tablespoons of tomato sauce, and chives with parsley or coriander, to your liking.

Trick: Preheat the oven to 180 degrees.

2. To start making baked meatballs, we will mix the beef chopped with the chopped cookie and the two egg yolks. We will also incorporate a pinch of salt, a pinch of nutmeg and another black pepper, as well as half grated carrot and half bunch of chopped chives. We will use the rest for Spanish sauce.

3. We mix all the ingredients well and with our hands we form the meat balls, which we will have on a baking sheet previously lined with baking paper. It is not necessary to water them with oil. We introduce the tray into the oven, preheated at 180ºC with heat up and down, and we program it for about 18 minutes. Half cooking -to nine minutes -we are going to take the tray and turn each of the meatballs to get a uniform cooking.

4. While the meatballs are in the oven, we make the Spanish sauce, which as you know there are many versions and varieties. The one that we propose here is soft but tasty, very balanced and of rich texture. In a saucepan we heat a jet of olive oil and then we put the onion and the rest of the carrot, both minced.

5. When the onion looks transparent, we add the well-chopped tomatoes and half a glass of white wine, as well as a little salt, black pepper and nutmeg.

6. Let it be cooked for five minutes over medium heat and now add half a glass of water, the meat broth pill and the rest of the chives bunch.

7. At this point the meatballs will already be very golden brown and we can remove them from the oven.

8. We introduce the baked meatballs in the casserole of the Spanish sauce and let everything be cooked together for a couple more minutes.

9. We serve the meatballs in very hot Spanish sauce and accompany them with a glass of red wine, enjoy! You can also try the Round Recipe for veal in Spanish sauce, in which we propose another variant of this sauce, also delicious.
