Almendra entrails

To prepare the veal entry recipe with almond sauce and caramelized red peppers

INGREDIENTS TO MAKE THE ALMENDA:
Granulated almonds roasted
1 entrail of vert
1 teaspoon of cornstarch
1 glass of red wine
½ glass of dark meat broth
2 tablespoons of sugar
1 red pepper
olive oil
2 tablespoons of soy sauce
salt
salt Pepper

INGREDIENTS TO MAKE THE ALMENDA:

2. First of all, we clean the pepper, take the nuggets and chop it into thick strips. We put it to cook from cold water for 10 minutes.

3. While the peppers are cooked, we prepare the almond sauce. To do this, in a saucepan, we throw the red wine, a meat broth, the cornstarch dissolved in water and soy and let it cook for 10 minutes. We chop the almonds and incorporate them into the saucepan. We reserve some pieces to decorate.

4. After the cooking time of the peppers, we throw the water and incorporate water again with 2 tablespoons of sugar. Let cook again until caramelizing the pepper.

5. We fille the entrails, salt and pepper it and cook it grilled with a splash of olive oil.

6. We serve the meat with the sauce and caramelized peppers.
