The red bean stew with vegetables is a perfect blunt dish to eat on a cold day. It is a plate based on legumes and vegetables cooked in abundant water with a rich stir -fry. The best thing about this vegan stew of Red Alubias is that it is very versatile since you can use a lot of any vegetable that you like and any legume. This red bean stew that I have shared with recipes in particular called it green stew, because it has 2 of my favorite green leafy vegetables: chard and kale (Col CRESPA), in addition to other vegetables that provide many vitamins, minerals and fiber, beans red and textured soy to provide a healthy vegetable protein to the dish and turn it into a complete and balanced dish.

Ingredients to make vegan stew of Red beans:
1. Put the soapy soy soak with water or vegetable broth as you prefer, and let it hydrate for at least 15 minutes. Then drain and reserve it.
2. Meanwhile, itch the onion, the carrot and the zucchini in small dice. Cut the sweet potato in medium diced and cut the garlic and celery into slices.
