Fried chickpea recipe with spinach

Ingredients to make fried chickpeas with spinach:
1 Cooked chickpea boat (400 grams)
250 grams of spinach
1 median onion
1 jet of extra virgin olive oil
1 jet of white wine
1 pinch of salt
1 pinch of ground black pepper ground
100 milliliters of water
Additional characteristics: cheap cost, sauteed

Ingredients to make fried chickpeas with spinach:

1. We start cleaning the spinach and washing them to remove any rest of the ground. We put a casserole with water to the fire and when it breaks to boil we add the spinach. We keep them until the bright green changes to the darkest green. We drain and reserve.



Trick: We can also use frozen spinach to make these stewed chickpeas and save this step. Instead we must put them to defrost several hours in advance.

2. We peel the onion and split it in tiny dice (Brunoise). In a wide pan we put a splash of oil and when it is hot we add the onion to poach it.

3. We wash the chickpeas very well to remove the remains of the canned liquid and put them to drain.

4. When the onion begins to be transparent add the boiled spinach, stir well and saute for about five minutes.

5. Add the drained chickpeas, a splash of white wine, salt, pepper and ground garlic and saute. When the wine is almost evaporated, we add half a glass of water (or a little more if necessary) and let the chickpeas with spinach boats until the liquid has totally reduced. Thus we ensure that the legumes are very soft.

6. We serve the fried chickpeas with warm spinach and enjoy!
