Legumes are one of the most characteristic foods of the Mediterranean diet and are very beneficial for our body. However, they are not very popular among children (and also for some older ones) and sometimes in summer we leave them relegated in the kitchen cabinets because we do not know very well how to prepare them to enjoy them even with heat. This time I propose in recipes a dish a dish of fried chickpeas with onion and dry tomato that triumphs in my house, which is prepared in a very short time and that is delicious either summer or winter. Ingredients to make fried chickpeas with onion and tomato: |
1 Cooked chickpea boat (400 grams) 50 grams of dry tomatoes in oil 2 medium -sized onions 1 glass of white wine 1 glass of water 1 bucket of vegetable broth or concentrated meat 2 tablespoons of oil 1 1 Pinch of salt 1 pinch of ground black pepper |

Ingredients to make fried chickpeas with onion and tomato:
1. We will begin to prepare these fried chickpeas with onion and tomato opening the chickpea boat, we pour them into a drainer and wash them well under the jet of the tap to remove the remains of the liquid that preserves them. We let it drain.
2. We peel onions and cut them in a finely Julian. Then we put a couple of spoonfuls of oil in a pan and when it is hot, we start to poach the cut onion.
Trick: We can take advantage of dried tomatoes, it will contribute more flavor to our dish.
3. When the onion begins to get soft add the crumbled broth cube, wine, water, ground pepper to our liking, drained chickpeas and dry tomatoes (whole or cut into smaller pieces, to our liking). We remove to mix all the ingredients of fried chickpeas, cover the pan and let everything be cooked together until the broth has reduced.
Trick: If we don have dry oil tomatoes we can use fresh tomatoes.
4. Once reduced and before removing from the heat we try the chickpeas ftios with onion and dry tomato and, if necessary, we rectify salt. Good benefit!
