We put the chickpeas soak in eve in tempered water with salt. The next day we splinate the chickpeas under the jet of cold water. We create the chickpeas in a pressure cooker with boiling water, salt, two leeks and a carrot. All the vegetable should be peeled and cut into pieces. In a saucepan, sauté in oil the onion and garlic and add the chopped tomato, a pinch of sugar and salt and let it cook 20 minutes. We try and pass through a strainer the tomato sauce and reserve. Save the chorizo and ham cut into fine slices. We add to this sauce the chickpeas, sauté and add the tomato sauce. We must rest so that the flavors are mixed and we serve.
