The previous night we clean the beans under the jet of cold water and put them soak inside a casserole or in a glass bowl.

For 4 people :: 250 grams of beans 2 liters of water ½ onion ½ glass of oil 1 kilo of pork rib green guindillas 1 tablespoon of spicy paprika |

2. The next day we introduce the beans in a pot with cold and clean water.
3. Add a stream of oil, pork ribs and fine chopped onion.
4. When it starts boiling, we break the boil throwing a glass of cold water.
5. The pot over low heat, letting the beans cook for 2 hours (in fast pot for 35 minutes).
6. When the beans are almost cooked, we prepare in a pan a stir-fry putting some tablespoons of very fine chopped oil and onion.
7. At the moment when the onion begins to brown, we remove the pan from the fire and add a teaspoon of spicy paprika.
8. Lets save well and pour into the Puchero de las Alubias.
9. We hope that the beans are just done, we remove them from the heat and let it stand for half an hour.
10. The chillies are served separately on a plate with a little salt.
