Ingredients to make Asturian fabada with Compango:

1. Alist all ingredients to prepare the Asturian fabes. You do not have any other as in my case, which I have used Creole sausage. Keep in mind at the time of choosing the fabes, the white or paint beans are the best.

2. As in the preparation of any other type of grain, the fabes must be soaked since the previous night. After that time the fabes take to a pot with plenty of water, the chopped onion and the garlic. There are people who differ when adding garlic and onion, if you have some good fabes it will not need, but we leave it to your choice.

3. Add all the meat, cover the pot and cook over low heat for 1 hour.

4. After that time, remove the foam that is formed at the top.

5. After withdrawing the foam, continue with the cooking of the fabes for 1 hour more and after this time, season with the condiments of the list to taste.

6. After seasoning, you must keep the pot to the fire for another hour and then, remove all the meat: the bacon, the chorizo, the bacon and reserve separately. Upload the fire and let the liquid reduce in half or until the fabes are as thick as you like.

7. The Asturian fabada with Compango is served and good benefit! Adapt this recipe to your liking and add more or less ingredients, such as vegetables as it is done in the fabes recipe with potatoes and sausage.
