Lubina is a type of white fish with a very low caloric contribution and excellent nutritional properties. 100 grams of fish, approximately, have 90-100 kcal, 18 grams of protein and important amounts of minerals such as potassium, sodium or calcium. To take advantage of all these nutrients, it is best to cook it grilled or in the oven, as we are going to explain in this recipe. Ingredients to make the whole baked with potatoes:
1. We peel the potatoes and cut them into slices not very thick to cook before. We also peel the onion and cut it into Julian. A tricky baked baked trick is to semi -semicocent potatoes before baking. To do this, we can fry them a little or, if we want the dish to be as healthy as possible, cook them in boiling water or make them to the microwave.
Trick: If we make them to the microwave, we will have to introduce a glass with water to generate steam, and cook at intervals of 2-3 minutes until they are almost ready.
2. We place the potatoes and onion on a baked tray previously smeared with a little oil. As we want to make a healthy and light recipe, we must control the amount of oil we use very well, not exceeding the three tablespoons in total. We sprinkle pepper to taste and other spices that we like.
Trick: We preheat the oven to 180 ºC, with the chill and fan option.
3. As we have semi-semi-semi-potatoes in advance, we can directly put the fish on top. However, if you prefer to make the potatoes in the oven in its entirety, you must cook them without the lubina for approximately 40 minutes, pouring the glass of water and the lemon juice before introducing them into the oven, and turning them around half cooking. Once the potatoes are ready, place the fish by introducing a slice of lemon inside to give more flavor and bake for 10-15 minutes, depending on the oven.
Trick: Instead of water you can use white wine or even add half a glass of water and a half of wine. We have preferred to eliminate wine to reduce calories as much as possible.
4. When we observe that the skin begins to brown, we turn it over and continue cooking the baked potatoes for 10 more minutes. It is very important to monitor the fish to avoid cooking too much and is dry.
Trick: To ensure that it does not dry or burns, when we turn around we can wait about 5 minutes and turn off the oven, since the whole baked lubina will have just done with the heat that remains.
5. We will know that the baked lubina is ready when we see that the skin is brown and inside it looks juicy. With our oven, the cooking time of total fish has been 25 minutes but, as we say, each oven is different and can take more or less.
6. We serve the whole baked lubina recipe with potatoes spraying above the juice that has remained cooking. Having added lemon, the result is a fish dish with a lot of flavor, ideal for dinner. We can accompany it with a green salad or with baked vegetables if we want to maintain a balanced and healthy diet.
