2. We chop the bacon with garlic and pepper until making a dough with which we will fill the tuna.
3. With a needle for mechar (if that needle is not available we can use a thick needle of those of pointing), we make holes in the tuna and in them we introduce the bacon dough.
4. We flour the tuna and sauté it in a pan with olive oil, browning it.
5. Next, we separate and reserve it.
6. In the same fat that we have sauté the tuna, we fry the onion finely cut into sheets, 2 garlic cloves, cut carrots and a bay leaf.
7. Once the rehash, we add a pinch of parsley and the piece of tuna along with a glass of wine and a little water to cover it.
8. We leave over 10 minutes to reduce the sauce, returning the piece of tuna from time to time.
9. Once cooked, the tuna piece is removed and the sauce is passed through the blender, removing the bay leaf.
