Salmon medallions recipe in zucchini sauce

Boil for three minutes the slices of zucchini, in salt water.

Ingredients to make salmon medallions in zucchini sauce:
500 g Clean and cut zucchinines
800 g Salmon slices, without thorns or skin
salt
pimient
40 ml olive oil
1 onion, finely minced
40 ml white wine
200 ml vegetable broth
the juice of a lemon
1 tablespoon chopped fresh dilus
steamed potatoes

Ingredients to make salmon medallions in zucchini sauce:

2. Drain and wrap each slice of fish with a zucchini sliding, (reserve the excess zucchini), season and fix with a stick. Brown the onion and the rest of the zucchini in the oil.

3. Water with wine and add the vegetable broth.

4. Let cook over medium low heat for 20 minutes.

5. Go through the blender and salt and pepper.

6. Add the lemon juice. Reserve. In a pan brown the salmon slices for eight minutes on both sides.

7. Serve them with the zucchini sauce and steamed potatoes.

8. Sprinkle with chopped dill.
