Palometa recipe with tomato sauce

We clean the palometa by removing the fins and scales, we conscientiously clean its interior and go down.

Ingredients to make a dove with tomato sauce:
For 4 people ::
una dove between 1 and 1.5 kilos.
1 large onion.
1 garlic clut 0´4º.
1 glass of 1st olive oil.
1 glass of white wine.
Salt.

2. We cut it into thick slices, which we go through water to finish cleaning and reserved.

3. Meanwhile, in a wide-back casserole, we sauté an onion cut into julienne (in strips) and a clove of garlic in the 1st olive oil.

4. When it is poached (that is, transparent onion), we add a crushed natural tomato can, the white wine glass, salt and sugar or saccharin to remove acidity from the tomato.

5. Let it boil about 15 minutes and pass through the Pasapurés and the fine strainer to make a fine tomato sauce.

6. We flour the fish and fry in the 0´4º olive oil, browning them into a pan, with little oil.

7. Once you fried the fish we introduce it in the sauce and let it boil.

8. The palometa will be at its point when the central spine is separated from the meat.

9. We serve sprinkling on them chopped parsley.
