1. The first thing we are going to do is clean the fish well, if we have not asked to take this step in the fish market. In this way, remove the central spine and place the salmon open on a baking sheet. If we want to add a little garnish, we can take one of the onions, cut it into a julienne, place it all over the tray and dispose of the fish on top.



Trick: We preheat the oven to 180 ºC with heat up and down.

2. Now, we start preparing the salmon filling. To do this, we chop the remaining onions finely and fry them in a pan with hot oil. When they begin to be transparent, we add the washed and chopped mushrooms and saute them along with the onion.

We pour a generous stream of olive oil above and another of white wine.

5. Bake the stuffed salmon for 20-30 minutes, or until it is ready, since depending on the size of the fish the weather may be greater.
