Sal pepper 1 laurel leaf 3 onion chopped in juliana 100gr. flour 250 ml. Virgin Olive Oil 250 ml.Caldo de Pescado 1 Coñac 1 vessel dry wine 8 fillets bonito |

2. The onion and laurel are thrown out and let it fry slowly until it is well pointed.
3. the flour is added and then the white wine, letting it reduce a little.
4. The broth is put on and after boiling is the finished sauce.
5. Bonito after cleaning it laminate the fillets, (only the white part, since the black part and the thorns are used to make the short broth used in the sauce).
6. A pan is put on the fire with a little oil and when it is hot, the fillets are put with salt and pepper.
7. They are turned around without having color, they are flambo with the cognac, they go to a casserole throwing the sauce above and finally puts in the oven for 5 minutes.
8. It is served with cooked potatoes and some chopped parsley.
