2. We prepare the papillote cutting 4 pieces of aluminum foil.
3. We put the mere at the bottom of each piece of aluminum, salt and pepper and add the butter, the chives, a sprig of parsley and a jet of white wine.
4. We fold the foil, leaving space inside, closing the sides twice on themselves.
5. We introduce in the oven and when the papillote is swollen, it will indicate that it is already in its perfect cooking point.
6. We present on the plate with the aluminum foil open in half, as if it were a letter and the diner gradually removes the chives, fish and their juice.
