We despair and remove the skin of the mere leaving it in fillets, season with salt, we batter in flour and fry in oil, once fried we pass the mere to an oven source.

1 mere of 1.5 kilos 200 g of pea |

2. In the oil where we have fried it, the very small chopped onion (Brunoise) is put to poach (Brunoise).
3. Add the chopped garlic, also chopped parsley and the peeled and clean pieces in pieces.
4. Once the vegetable is poached we bind with a spoonful of flour and wet with the white wine also adding the peas.
5. We wet with a little water the vegetable and let it boil until the sauce links.
6. We put salt.
7. We pour this sauce on the mere and introduce it in the oven to 150 ºC for twenty minutes.
8. It is served hot at the same source.
