Green pepper tuna recipe

To make the fumet we cook the thorns and tuna skin in a casserole with cold water, a peeled onion split in half and a clean whole leek.

For 4 people ::
4 pieces of tuna without thorns and without skin.
1/2 liter of fumet (fish broth).
1/2 liter of cream for cook dl of olive oil 0´4º.

2. When the fumet begins to boil we remove the foam of the surface and let cook for 50 minutes over low but continuous heat.

7. We put the tuna on the plate and sack with the green pepper cream and accompany with some cooked and sauteed vegetables as garrison.
