We prepare the vinaigrette mixing the chopped vegetables in brunoise (small squares) the oil and vinegar.

For 4 people :: ½ kilo of tuna in thick slices 1 green pepper 1 fresh chives |

2. We reserve.
3. We cut the tuna into thick tacos and marin for 24 hours in the vinaigrette with the vegetables cut into a container covered in the fridge.
4. The next day, we take out of the refrigerator in advance to take ambient temperature.
5. We serve the slightly drained tacos of this vinaigrette but with part of the vegetables as a decoration.
6. These pretty tacos are placed on previously fried trigueros asparagus with very little oil and salt.
7. If we do not like tuna to be a little raw in the center we can introduce the tuna tacos for 30 seconds in the microwave so that it cook slightly through the center.
