Ingredients to make fish garlic:

1. I prefer to use Black Bass for this fish recipe, but you can use the river fish you want. The first thing we must do is fad the fish, extract the viscera, wash them very well and perform transverse cuts like 2 cm. They are left in a bowl.

2. Then, the bread, the coriander, the peeled garlic, the paprika and the laurel are put in a mortar. We fell everything well and, once crushed, move the mortar circularly and we are gradually incorporating olive oil.

3. When we have formed as a paste with the previous ingredients, it is poured on the fish adding salt to taste and covering them well with the hands to soak them from the mixture everywhere. We let it macerate for approximately 15 minutes.

4. We put oil to fry in a pan and put it on the fire. We flour the macerated fish and fry them on both sides when the oil is hot. When they are doaditos, we pass them to a Honda tray, or the container to serve we have at hand.

5. Apart, we put a casserole over medium-low heat with the white wine and the preparation of excess garlic that we made to macerate the fish. Let cook for approximately 10 minutes.
