Congrio Rancio Guisado recipe

Ingredients to make Rancio Guisado Congrio:
A kilo of congrio rancio
2 green peppers
2 cloves of garlic
1 onion
1 tomato maturo
1 laurel leaf
1 dry pepper
1 teaspoon of paprika
1 pinch of saffron
salt
oil
1 tablespoon of flour
Red peppers
3 eggs
perejil

Ingredients to make Rancio Guisado Congrio:

2. Cook the congrium with fresh water and once cooked we reserve it together with half a liter of water of its own cooking.

5. Let cook until it is at its point, and rectify salt if necessary.

6. We serve the table in the same clay casserole where it has been stewed, adorned with cooked eggs and roasted red pepper strips.
