Ingredients to make cod tortillitas:
1. Do you have the ingredients ready for cod tortillitas? Perfect! The first thing you will do will be the cod. Let it rest in water and change it about three times. In this case, as is little cod, half an hour will be enough to detach it.
2. While the cod is noted, itch the onion in very finite pieces. Here you can add other ingredients that you want, such as paprika, garlic, parsley leaves or strands of saffron. If you want to use flour, approximately 100 grams will be enough.
Trick: Preheat the oven at 180 ºC so that you finish more quickly and cod pancakes are cooking evenly.
3. On the other hand, beat the eggs in a bowl. Adding salt will not be necessary since the cod will be salty on its own.
4. Subsequently, you can cut the cod finely or shred it.
Trick: If you want to make sure it was not very salty, you can try it.
5. Mix all the ingredients with the eggs and revolt them well.
6. Now, pour the mixture of cod tortillitas in a tray of mold for cupcakes. A silicone tray like the one you can see in the photo will work perfectly. Enter the preheated oven tray at 180 ºC for about 15 minutes or until you see that they are golden brown and have increased in size.
Trick: If you want you to remain more spongy, add a little baking powder.
7. Once they are ready, you can serve the cod tortillitas to enjoy them with a pinch of pepper and cherry tomatoes. It is the ideal presentation for a perfect breakfast or dinner! Did you want more recipes with cod? You can try more with any of these:- Bilbao cod
