Ingredients to make charales in green sauce:

1. The first step to prepare the charals in green sauce is to collect all the ingredients. For those who are not in Mexico, the Charales are small fish, typical of some lakes in the country, this PES is characterized by having a strong flavor and could be replaced by anchovies.

2. Next, we clean the tomatoes, we put them to cook along with the garlic, a piece of onion and the green chiles. Once cooked we will grind them in the blender and put aside.

3. In another container we boil the potatoes with a little salt until they soften. We remove them from hot water and let them cool. Then we peel and leave them in paintings.

4. To prepare the charales we remove the head, rinse them twice and let drain into a strange. Subsequently we toast in a comal.

5. We separate the whites from the yolks and we are going to beat the whites to the point of nougat. When the whites are already firm, we add the yolks one by one. Once they are well integrated we will add the previously toasted charales.

6. We put a pan on the stove over high heat and pour enough oil. Since it is very hot we are placing portions of a spoonful soup to form the charal pancakes. Once we have the pancakes we put them to drain on a paper napkin to remove the fat surplus.

7. To make the green sauce, in another pan we will place some oil and brown the chopped potatoes in cubes. Once golden we lower the heat and we will pour the previously prepared green sauce. We let it boil and season with salt, pepper and ground nail.

Trick: Remember that the Charales are salty, you have to use salt in moderation.

8. We allow you to continue boiling the green sauce for about five more minutes. Then, we add Charals cakes along with an Epazote branch.

9. We continue cooking the charal pancakes in green sauce for another 10 minutes. We serve accompanied by pot beans or refritos.
