2. We cut the belly and head.
3. We have them well in a clay casserole.
4. On the other hand, in a pan we throw the virgin olive oil, and when it is hot we put the onion cut into julienne, the peeled garlic and cut in lama (slices) the chopped tomato, and with these ingredients we will make a stir-fry.
5. When we are ready, we incorporate a teaspoon of sweet paprika followed by a good jet of cognac.
6. Let cook all a few minutes and all this set is incorporated into the clay casserole where we have the prepared sardines.
7. We carry this container with the baked fish and after about five minutes (strong oven) we will have them ready to serve.
