Lately, Indian food is feeling a lot. I always liked it but I have never seriously prepared your dishes. I have made a little thing at some point but nothing more. I have finally encouraged to try and experience more and, as on this occasion, to invent dishes inspired by that kitchen, which seems fascinating and delicious. This time I had a salmon and a cauliflower and prepared a succulent but at the same time light very aromatic dish, with a mixture of spices that was great. Without covering its flavor but quite the opposite, empowering it; and a cauliflower rice to the saffron aroma that was the perfect complement. Finally, I added a fresh touch with a great yogurt sauce and Sumac. It is wrong that I say it but it was 10. Ingredients for baked salmon with cauliflower: |
1 Loin or large salt of salmon 1 jet of olive oil 1 pinch of salt to taste ¼ teaspoon of cinnamon powder ¼ teaspoon of smoked sweet paprika 1 pinch of cayena pepper ½ teaspoon of ground garlic 1½ teaspoons of ground ginger 1½ teaspoons of cumin powder 1 teaspoon of turmeric 1 lemon 1 cauliflor not very large saffron in dust and/or in strands 1 Natural Natural Yogurt Creamy 1 teaspoon of Sumac (Zumaque) |

Ingredients for baked salmon with cauliflower:
1. We cut the cauliflower into small flowers, we wash them, drain them and scratch them. In this way, we get rice -like pieces. We reserve.
2. Now we get with salmon. We spread a little oil down both sides and place it in an oven fountain with the skin down. Add salt to taste.
3. In a bowl we mix the spices and cover with them the entire surface of the salmon generously. Finally, we water with a splash of lemon juice (we squeeze half a lemon above). When everything is ready we put the fish in the baked already hot at 180 ºC about 15 minutes, although the final time will vary a little according to the oven and, above all, according to the thickness of the fish. When the 15 minutes pass, click it and, if necessary, you leave it 5 more minutes.
4. While salmon is baked, we heat a little oil in a large pan or in a wok. Add the cauliflower and saffron and saute continuously stirring until the vegetable takes a yellowish color. When ready we serve it in a fountain or tray.
Trick: I put Spanish saffron in strands and Indian saffron powder. The first is more aromatic and the second gives more color without having to add water. The amount will depend on how yellow we want to be cauliflower.
5. Finally, we will put ourselves with the yogurt sauce, which gives a fresh touch great to the plate. To do this, we mix in a bowl the yogurt with a pinch of salt, a lemon jet and the Sumac. When it is very homogeneous we put the sauce in the serve bowl.
6. When the salmon is ready, we take it out of the oven and place it on the cauliflower rice to serve it. I decorated it with a shine of thyme. You will see what more delicious dish is left.
