The cod, due to its excellent salt conservation, it is one of the most popular fish in the traditional recipes of Holy Week. 400 grams of desalted or fresh cod 3 tender garlic 1 tender onion ½ eggpher ½ Red pepper 2 tomatoes 1 pinch of salt 1 pinch of rosemary 1 jet of olive oil 2 cayenas 1 pinch of paprika sweet or spicy |

Ingredients to make cod with ratatus:
1. Pica the tender onion and tender garlic in medium and pochal pieces for 4 minutes in a saucepan or pot with a jet of olive oil. To prepare the recipe in a faster way, you can also make the cod with boat ratist . In this case, it goes directly to step 4.
Trick: You can use 2 or 3 garlic cloves instead of tender garlic.
2. Add the red pepper and eggplant, both washed and cut previously. Remove well and season to your liking. Kitchen for 4 or 5 more minutes.
Trick: If you use desalted cod, we advise you not to add much salt in this process, because it usually has a stronger flavor.
3. Peel the tomatoes and cut them into tiny cubes. Add a teaspoon of sweet or spicy paprika to the saucepan, cook for a few seconds and then add the tomato. Let it be lowered over low heat for 10 minutes and remove from time to time.
Trick: You can use natural crushed tomato if you wish.
4. On a baking sheet, place the backs of cod and throw a splash of olive oil, rosemary leaves and the two cayenas. Bake the fish 12 to 15 minutes at 180 ºC. You could also do the cod with baked ratist by adding the vegetables to the tray.
Trick: You can flour the fish and fry it instead of baking it. You will give a touch of flavor to the plate.
5. Remove the fish from the fish and prepare the plated. Place the vegetables at the base of the plate forming a circle and put the cod on top. Sprinkle some paprika and, the cod recipe will be ready with ratatus!
Trick: If you want, you can sprinkle some grated cheese or add a layer of alioli on fish, cook in the oven for a few minutes and serve the cod with gratin ratio.
