Anchovy recipe to the cider

We clean the anchovies by removing the central spine and head and leaving only the backs and salt them slightly.

Ingredients to anchovies to the cider:
1.5 kg of anchovies
300 milliliters of sidra
1 fresh chives
2 cloves of garlic
some branches of parsley
¼ liter of virgin olive oil
salt

2. We chop the onion and garlic in brouroisse (small minced in squares) and fry the vegetables over low heat in a clay casserole.

3. When the onion is transparent, we put the anchovies and heat them back and forth on each side.

4. We take an anchovies out of the casserole and reserve.

5. Add the cider to the casserole, we upload the fire, let it reduce the juice for 5 minutes and link the juice with circular movements of the casserole.

6. We take the casserole from the fire, add the anchovies and the chopped parsley, cover and let stand for 10 minutes.

7. We serve hot.
