2. At the same time we press with the fingertips of the index fingers and thumb the head of the anchovy and pull carefully, so that, by detaching it by the cogote to remove it, it has been adhered to the guts.
3. We wash them a little in cold water (to remove the blood) and we cleaned each with absorbent paper.
4. We sprinkle them with the fat salt and leave them in the refrigerator 15 minutes.
5. Mix in a wide glass bowl The juice of the fruit chosen with that of lemon, the three types of pepper and vinegar, and introduce the anchovies in this mixture, so that they are completely submerged in the marinate.

7. To present them to the table, we get the anchovies from the marinate, sprinkle them with fine salt, fresh chopped parsley and sprinkle them with extra virgin olive oil.
