2. As we propose to make truffled eggs with potatoes, when cooking the recipe begins to peel the potatoes and cut them into rather thin slices. We have decided to cook them in the oven, but you can make straw potatoes, common fried potatoes or microwave baked potatoes, you choose!





3. grease the baking sheet with a little oil, place the potato slices in it, add a little more oil and a water jet (you could use white wine, but we want the main taste of the plate to be that of the truffle). Bake the potatoes at 180 ºC, with heat up and down, for 15-20 minutes or until they are made.





4. Place the potatoes in two dishes and put a pan with oil to heat. You can make truffled eggs in different ways: cooking fried eggs or making the climbing eggs (poché). We have chosen to make them in the pan, but with less oil so that the dish is healthier and still highlights the flavor of truffle. To cook them, heat a stream of olive oil and add the first egg. Kitchen over medium-high heat until the Clara is to your liking.



Trick: The amount of oil used is fair so that the egg can be cooked, approximately 2 tablespoons of oil.





5. Place the egg on the potatoes and cook the next. If necessary, add a little more oil. If your pan is large, you could cook the eggs two by two perfectly. We have not used salt, but if you want to add a pinch, we advise you to do it when you are cooking the egg.
