Scavated egg recipe with almond sauce

We peel the clove of garlic and together with the almonds and 8 tablespoons of milk we chop everything in the blender to form a cream.

Ingredients to make climbing eggs with almond sauce:
For 4 people ::
4 eggs.
8 tablespoons of milk.
20 grams of roasted almonds. ´4º.
4 slices of toasted bread in oven.
A sprig of parsley.
Salt.

2. While we incorporate a splash of 0´4º olive oil to give it consistency of mayonnaise.

3. Once the sauce is mixed and formed we add the spoonfuls of fried tomato and a splash of white wine.

4. Cook the sauce over low heat for 5 minutes and if it were thick we add a splash of milk to lighten it.

5. With this sauce we will accompany the climbing eggs.

6. To climb the eggs we have a casserole with little height and wide with boiling water with salt and a splash of vinegar.

7. We introduce one by one the eggs to the boiling water (as if we force to make fried eggs) and with the help of the sparkling we wrap the yolk with the clear and take out when the clear one has curdled around the yolk.

8. We place the eggs on a slice of toasted bread and above we sack with the almond sauce.

9. Sprinkle with a pinch of parsley above each egg and its sauce.

10. We serve hot.
