Santiago cake recipe

Prepare a dough with an egg, butter, flour and a splash of water.

2. Knead it and line an aluminum mold with it. The dough must be very fine.

3. In a separate bowl mix the ground almond with sugar and cinnamon.

4. Add the Jerez little by little and the six eggs to form a homogeneous dough.

5. Pour the dough on the mold and bake at a gentle temperature until golden brown and the cooked base approx. 1 hour.

6. Let cool we demold it and sprinkle it with glasses sugar.

7. In Santiago you usually put a pattern with the cross to decorate it.
