Cook the eggs in a saucepan with boiling water with a jet of vinegar and salt for 12 minutes.

For 4 people 8 eggs 250 grams of smoked salmon some lettuce leaves 1 pear blanquilla 2 tablespoons of olive oil 1 tablespoon of white wine vinegar salt 2 tablespoons of mayonnaise |

2. Once cooked we cool under the jet of tap water and peel them.
3. We cut part of the egg base and take out the yolk carefully not to break the clear.
4. We give another tiny cut on the opposite side for the egg to remain standing.
5. We peel the pear and cut its meat into small pieces (Bruunoisse cut).
6. We do the same type of cut with lettuce leaves and with almost all smoked salmon leaving a salmon slice to decorate.
7. Mix the yolks with the pieces of pear, lettuce and salmon, we season with a little oil, vinegar and salt and join the whole with mayonnaise.
8. Fill with the help of a spoon the eggs and decorate with a smoked salmon strip.
9. We introduce to the fridge covered until serving.
