2. Once fried we separate and let cool.
3. We prepare a bechamel sauce, putting a small saucepan with the butter.
4. When the butter is melted, add the flour and stir with a stick spoon.
5. Lets sauté slightly and add the milk very hot, little by little, while moving, to avoid lumps.
6. We season with salt, grated nutmeg and ground pepper and keep cooking for about 5 minutes, while moving.
7. In a source greased with oil, we place a tablespoon of bechamel, on top we put a fried egg and cover with another tablespoon of bechamel, so that it is well covered.
8. Let cool, and repeat this operation until we have covered the 8 fried eggs.
9. We prepare a plate with breadcrumbs and another with two beaten eggs.
10. When the eggs have a very cold bechamel, we proceed to emphasize them by first through the breadcrumbs, then through the beaten egg and again by the breadcrumbs.
11. We put the pan on the fire with plenty of oil and when it is very hot, fry the empanados eggs, until they are well golden brown.
12. Then we take out and let the excess oil from the frying and serve hot accompanied by a hot tomato sauce.
