Egg recipe with standard peppers

Peel the potatoes and wash. Go through a mandolin, to grate them straw type.

800 g potatoes
250 g Padrón peppers
1 onion
olive oil
fine and fat
perejil fresh

2. Soak to release the starch. Remove a drainer and dry on absorbent paper.

3. Step 2 Put a pan or fryer with plenty of oil.

4. Peel the onions and cut into fine strips; frying, leaving them brown and remove a well drained dish.

5. Reserve.

6. Fry the potatoes, in small batches, so that they do not stick.

7. When they are doaditas, remove and reserve in a strainer.

8. Step 3 Finally, fry the peppers in that same oil and sprinkle of thick salt, once made.

9. Reserve.

10. Fry the eggs in a separate pan, with a little salt.

11. Place the straw potatoes in the presentation and the fried eggs with the peppers, then serve.
