Ingredients to make zucchini omelet with onion and pepper:
1. We cut all ingredients, that is, zucchini, onion and pepper, previously washed, to proceed to the preparation of the vegetable tortilla.
2. Once we have the ingredients ready, we start the recipe out a little and poach the zucchini. When done, we let it drain, since it releases a lot of liquid and does not interest us.
3. We poach the onion and pepper. We add a pinch of salt to sweat and, when these ingredients are ready, we drain them.
4. Mix the eggs without giving it a lot of air with a pinch of salt, pepper and a spoonful of chopped parsley. This last ingredient helps to enhance the taste of the zucchini omelette and pepper, so that we advise not to avoid it.
5. Add to the previous mixture the cooked vegetables, mix and pass the preparation to a hot pan with a little oil.
