The original recipe is made with egg white, however, we have replaced this ingredient with water and, in option, juice. Thus, the recipe begins by mixing the ground almond with the Glass sugar. 2. If you do not have Glass sugar and you can not make the home version, you must dissolve the granulated sugar heating it with the water and the juice chosen over medium heat. Once dissolved, add the almond and mix until you get a dough.



Trick: The amount of juice is to taste, but it is always better to add little by little to prevent the dough from being too humid.

3. If you have used Glass sugar, add the water to the mixture and knead until you get a compact and manageable mass. Likewise, it incorporates the lemon or orange juice if you wish.
