1) Crush the plums together with the sugar, the lemon juice and the balsamic until obtaining a smooth puree.

500 g. of mature red plums, peeled, boneless and chopped 150-200 g. of sugar lemon juice to taste 1 teaspoon of balsamic vinegar 200 c.c. of liquid cream to mount. |

2. Cover with transparent film and put the refrigerator for 2 hours.
3. Mount the cream with a little sugar and reserve in the refrigerator.
4. 2) After this time, try the sugar and acidity point, adding more sugar if necessary.
5. You don have to forget that the mixture, when frozen, loses sweetness.
6. Mix with the mounted cream and put in a refrigerator for approximately 15-20 minutes, or until it acquires the appropriate consistency.
7. If you have no refrigerator, proceed as I have explained on other occasions.
8. 3) Serve in the form of balls, accompanied by liquid cream with sugar, or in cucuruchos.
9. Note: The puree obtained before incorporating the mounted cream constitutes a magnificent coulis to accompany desserts or ice cream of another flavor, such as cheese or yogurt.
