2. Cover until it begins to boil, letting it cook over medium heat for five minutes.
3. Peel the peaches and add in the syrup. Add red wine and continue cooking for at least 20 minutes.
4. over soft heat, taking special care that the liquid always covers the fruit. When the peaches are tender, remove from the heat and let cool in the syrup.
5. Split in two peaches to remove the bone, or cut into pieces; Fill the glass jar with them and cover with the cooking syrup cast by a fine sieve.
6. Cover and cook in the water bath for 20 minutes, to make the void. Remove and let the boats cool down to expel all the air.
7. Maintain in maceration 15 days at least before consuming them, without exposing the light or heat.
