Puff pastry cake recipe with forest fruits

In summer we have enough birthdays in the family. One of the most important is that of my mother, that for that she is my mother! 🙂 This year I wanted to prepare a special cake. Something that was going to like it a lot. At the end I decided on a puff pastry cake with pastry cream and forest fruits, which we always feel like. And we didn like it, we loved it. Seriously, it is wrong that I say it but I think it is from the puff pastry and richer red fruits, if not the richest, of all that I have done so far. That told me all who were in the celebration. At its sweetness point (with sweetener!), The ideal fruits (fruits of the forest) and the crunchy puff pastry. One of the simplest cakes to prepare what I have in my recipe book that I share with recipesgratis and a wonderful taste. They are already asking me to repeat this puff pastry cake with forest fruits again … and rightly! A true delicacy 🙂

Ingredients to make puff pastry with forest fruits:
1 puff pastry
500 grams of forest fruits
500 milliliters of half -nacked milk
1 vanilla pod
120 grams of sugar or equivalent sweetener
4 egg yolks
40 grams of corn

Ingredients to make puff pastry with forest fruits:

1. First of all, we will start making this puff pastry and red fruits, putting a saucepan into the fire with the seeds of the vanilla sheath. When we start boiling, we remove it and leave it covered. We reserve.





2. In another saucepan we put the yolks, sugar and cornstarch, and mix until it is homogeneous.





3. We cast the milk to avoid most of the vanilla seeds and pour it on the egg mixture without stopping removing so that the yolks are not set. We put on the fire and keep stirring until it mixes thickens and have the custard of the puff pastry cake with fruits from the forest ready.





4. We then put the custard in a bowl and cover it with transparent film, touching the mixture to prevent crusting. Let it cold down.





5. Meanwhile, we prepare the puff pastry. To do this, we cut the way we want, in my case a rectangle, and some strips that we will place on the edges. We click the easy fruit puff pastry with a fork to prevent it from climbing (except for the edges). Then we paint the edges with egg so that they are golden. You can also make your own homemade puff pastry.





6. Bake the puff pastry in the oven already hot at 200 ºC about 10 minutes, until the edges go up and are golden to our liking. We take out of the oven and let cool.





7. When both the custard and the puff pastry are totally cold, we will fill the last with the cream.





8. Then we place the fruits of the forest (previously washed and dried) in the way we like the most in the puff pastry and custard and put it in the fridge.





9. 5 or 10 minutes before serving we take out the puff pastry, pastry cream and forest fruits so that it is not too cold and sprinkle a little glasses on top to decorate. You just need to blow your candles and eat! You will see what delight of puff pastry and forest fruits. And how easy!
