1. Heat the sugar in a saucepan, add the water and let it boil. It is important that you do not lower the fire so that the syrup is done well. You will see that large whitish bubbles begin to form and that little by little it will be prepared, you can remove with a wooden spoon.





2. Add some pieces of lemon peel and leave them for 5 minutes, so the syrup will take a slight flavor and aroma to lemon. Remove the peels carefully so as not to burn and let the sugar syrup continue boiling to form a thick syrup. Once ready, remove it from the fire to cool.



Trick: Check its texture dropping a few drops with a spoon, if they fall slowly it will mean that you are ready.





3. Separate the brothers from the whites and reserve the whites in the fridge to use them in other recipes. For example, you can make homemade homeless meringue. Beat the yolks with electric rods until they become a foamy and forceful cream. This process is long, but here lies the key to getting good eggs, so it is important to have patience and beat to achieve that volume and creaminess in the yolks.





4. At this point the syrup will be warm, so it is the right time to add it slowly to the yolks while still beating so that it integrates completely.





5. When the cream acquires an appearance similar to that of a custard, replace it in small cups and sprinkle some gofio or cinnamon powder above. We recommend leaving dessert in the fridge for at least 1 hour to enjoy it totally cold. Likewise, it is advisable
