Ingredients to make Mexican cheese pay:
1. Before getting to work we let all the ingredients ready. You can distribute the 250 grams of cheese between Philadelphia cheese, double cream cheese and Oaxaca cheese. In this way our cheese pay will have more flavor.
2. We start the recipe for the dough. We take a bowl and chop the butter well. Then, we mix it with the flour using our fingers, to form a sandy dough. We add the sugar and continue mixing in the same way.
3. Add the egg yolk and continue kneading until we get a consistent and homogeneous mass. We wrap in film paper and reserve in the refrigerator for 1 hour.
4. Past time, we extend the dough with a roller giving it a thickness of approximately 3 mm. We grease a mold and cover it with the dough, remove the excess of the edge and prick the base with a fork.
5. We cover with baking paper and place some weight on it, such as lentils or chickpeas. Bake the dough for 25 minutes at 180ºC. After this time, remove the weight and bake for 5 more minutes. We retire and reserve.
6. Now we are going to prepare the cheese filling. To do this, liquefy the two types of milk and add the cheeses. We continue liquefying and, when they have integrated, we incorporate the previously ground cookies and continue beating.
7. We pour the mixture into the mold where we have the dough and bake the cheese pay for 20-30 minutes to 150ºC. When ready, let cool and we can eat it. We will keep it in the refrigerator. We can decorate with red fruits.
