We put the sugar in the glass and glaze it, Vel 5-7-9, progressively. We incorporate the lemon zest, and the almonds, and we crush vel 5-7-9 again. We incorporate the first egg, with the machine stopped, and put vel. 6. We will throw the rest of the eggs one by one, with the machine in vel 6. At the end, we preheat the oven to 250 º and we pour the dough into the paper capsules, which we will put on the oven tray. We lower the oven to about 180º and introduce the marquesas about 120-12 minutes, until golden brown. I hope you like them, they are delicious.
