1. First we enlist the ingredients. In our case we have replaced the sugars of the traditional Jijona nougat with Arce Syrup.
2. To start making homemade jijona nougat, we roast the almonds until they acquire a golden color that says Eatme.
3. We undo the Arce syrup with a little lemon zest in a saucepan to heat, putting it to a minimum. We remove from time to time so that it does not stick and the sugarless nougat is perfect.
4. When it begins to boil, we ride the clear to the snow point. We do this step so that Jijona nougat without sugar obtains a better consistency and texture. To do this, you can use electric, manual or even two forks.

9. The next day, we can already unmold it carefully to proceed to serve it and enjoy this easy and fast jijona nougat.
10. Once removed from the mold, we can cut the nougat of Jijona without sugar with a knife to match it.
