Ice Cream Preparation Recipe

For 1 liter ::
8 dl milk
35 2 dl cream
250 gr. sugar
8 YEMA (s) of egg
1 pod (s) vanilla
1 sheet (s) gelatina

2. The recipe comes from a pastry chef friend from a friend who has provided it to me.

3. Some will say that it is very laborious, but the final result is worth the effort.

4. In the preparation of ice cream, it must be taken into account that an increase in the humidity contained (milk or other liquids such as alcohol) gives a more compact structure the finished ice cream.

5. Sugar is antifreeze and an excessive increase in contained sugars (sugar, honey, liquors, chocolate) also changes the ice cream structure facilitating crystallization and increases preparation time.

6. Fruit has to be top quality, very mature and smell.

7. Preparation for a liter of ice cream: cut the vanilla sheath along and with a little knife extract the pulp that we will put in the milk.

8. Put the gelatin leaf in a little warm water to soften.

9. Boil the milk with the open vanilla sheath along.

10. Beat the yolks with the sugar, add the cream and mix carefully.

11. Add some hot milk, mix well and pour into the saucepan that contains milk and vanilla.

12. Let it cook 5-6 minutes without boiling (!) At 80-85 °.

13. Remove from heat and when cool a little add the softened gelatin leaf and mix to join the base well.

14. Pass this mixture to a glass container and put it to mature 24 hours in the refrigerated.

15. This maturation enhances flavors.

16. Types of ice cream: for an ice cream with hazelnuts (or nuts or pine nuts): 300 gr. of nuts (reserve a handful for adornment, if possible toast), crush them with a knife (ideally a swinging knife is used).

17. Prepare a fairly liquid candy with 300 gr. of sugar and when you begin to brown add the hazelnuts.

18. After it has cooled again the sugar/hazelnut mixture.

19. Mix the ice cream base that we have taken from the refrigerator with caramelized /hazelnut sugar in the mixer and put it in the sorbetera to make the ice cream.

20. If another fruit is used for which we do not have juice (strawberries, raspberries, apricots or dams, mangoes etc) prepare a juice with a little of the elevated fruit and water to reach 200 gr. of juice required.

21. Variant: the milk cream can be replaced by milk, condensed milk or other liquids (yogurt, lean ricotta, fruit alcohol (krisch!), Rum, etc.) taking into account the warning in terms of modification of the texture and freezing time.
