1. For a sweet peach jam, the recommended proportion is as follows: the same amount of sugar as of grams must be added. However, if we prefer to opt for a more fruit jam and, therefore, less sweet, the amount of sugar should be half. Thus, if we use 1 kilo of peaches, we will need 500 grams of sugar. We use the lemon with two objectives: keep the jam for a longer time and thicken it. Therefore, the amount can vary a bit to taste.





2. Once the proportion of the ingredients is clarified, we start! We peel the peaches, chop them and place them in a pot with the sugar. We cook over medium heat, stirring constantly until the sugar has been completely dissolved.





3. When the sugar has dissolved and started boiling, we lower the temperature to cook the peach jam over low heat. Likewise, we add the lemon juice. To obtain a softer and more liquid jam we can add a glass of water.





4. We let the jam cook until acquires the desired texture. In general, the cooking time of peach jam oscillates 40-50 minutes. During this time it is important to remove the mixture from time to time to prevent the fruit from burning or stuck at the bottom of the pot. Once ready, we recommend letting it be a bit and crush it slightly so that it is more homogeneous, although if you like to find pieces of fruit you can leave it as is.





5. Before the jam is cooled, we pack it in previously sterilized glass jars, we close them tightly and leave them face down during the night. In this way, we will pack the vacuum jam, obtaining a canned peach jam, and we can save it for months in our pantry. Once open, we will have to consume it in a maximum period of a week or week and a half. Lemon is a powerful natural preservative, however, it is not as effective as artificial preservatives.
