1. In the preparation of this dessert, what takes to cook is the apple so we will start with it. We clean and peel 3 of the 4 apples, we remove their hearts and nuggets and leave them in small pieces. In a saucepan we add the apple juice, apple pieces and the spoonful of honey. Let cook over low heat stirring from time to time until we have the apple as jam. If we have any little piece, nothing happens. This will take us 1 hour more or less than patience. Once ready we allow to cool to room temperature and then we will put it in the refrigerator. We will need it cold so that the mousse does not get off when we put it on top. 2. To prepare the mousse we will need a large bowl where we will mix all the ingredients once they are ready. In that big bowl we put the yogurts and the icing sugar and revolve well. Now it is the clear turn. We will prepare them ready. They have to be very well prepared so that the mousse then stays with the ideal texture. Once mounted we add them to the bowl where the yogurt mixture is with the icing sugar and with the help of a silicone spatula we mix with enveloping movements from top to bottom until everything is well integrated. We ride the cream and also add it to the big bowl. We mix well in the same way we made clearly, enveloping movements from top to bottom. Arriving at this point we only have to fill the glasses, vessels, bowls … where you want to present and refrigerate. 3. We peel and chop the apple that we have left and place the pieces at the bottom of the glass. Above we put a few tablespoons of the apple cooked at the beginning and to finish, with the help of a pastry bag, a layer of the yogurt mixture. Once we have all the cups ready we put in the refrigerator at least 2 hours to refrigerate well and the mousse takes its spongy texture. 4. We already have the mousse very cool, we only have to decide if we eat it as it is or prepare some type of final decoration, chocolate noodles, syrups, chopped fruit … to the taste of the consumer.
