Ingredients to make gratin melons: |
For 4 people :: 2 small melons 1 SandÃa small 1/2 of Kg. Of strawberry 2 pears 1 can pineapple in syrup 1/2 liter of milk 6 eggs 2 tablespoons of cornstarch 150 gr. of sugar 1/2 teaspoon of tartaric acid. |
Ingredients to make gratin melons:
2. Mix the cornstarch and sugar in a salad bowl.
3. Add the 6 yolks and incorporate the milk.
4. Beat well so that lumps are not formed.
5. put it in a saucepan over low heat or in the water bath, stirring without stopping, for 10 minutes.
6. Clean the strawberries.
7. Reserve 10 or 12 and pass the others through the Pasapurés.
8. Incorporate them to the previous cream, mix well and distribute this cream in four glasses.
9. put it in the fridge.
10. Cut the melons in half.
11. Remove the seeds and empty them a little with a spoon.
12. Mix the melon balls, pears, peeled and cut into daditos, watermelon and pineapple also in pieces.
13. Water everything with the pineapple syrup and mix well.
14. Distribute these fruits in the 4 halves of melon.
15. Beat the whites to the point of firm snow, add the tartaric acid.
16. Cover the melons with the whites with the pastry bag so that they are prettier.
17. Gratin and serve them accompanied by strawberry cream.
