Ingredients to make easy and fast French apple cake:
1. To make our Norman cake, we will first make the dough. To do this, we are going to put the sugar, flour and butter cut into pieces in a wide bowl. We knead with the hands until leaving a sawdust texture.
2. Then, add the egg and a splash of water. We knead with the hand until we get a homogeneous mass that does not stick in the hands.
3. And we form a ball that we will wrap on film paper and leave in the fridge for 2 hours (I had only one).
4. While the dough cools, we are going to make the apple compote. To do this, we peel and discourage four acidic apples. We cut them into dice, put them in a saucepan with 100 ml of water and three tablespoons of sugar, and cook over medium heat with the covered pot, removing from time to time until you get a compote (the blocks will have been put soft but not undone ). We reserve.
5. And now we go with the almond cream of the French apple cake. First, we are going to heat the liter of raw milk until its boiling. What is going to interest us is the cream that forms, the rest of the milk, once cold, we reserve it in the fridge to consume it as is, but for the recipe, we only need the cream that forms on its surface.
Trick: You can replace this step by simply by adding one more tablespoon of cream to the almond cream, although it is true that it gives a more intense flavor the cream formed when boiling the milk.
6. We put the sugar in a wide bowl, the butter cut into piece and the eggs. We also incorporate the cream obtained to boil the milk and the tablespoon of cream for mounting or milk cream. We mix all the ingredients well until you get a cream. We reserve.
7. It is time to get the dough we had reserved in the fridge. We slightly flour a work surface and stretch half of the dough very finely. We grease a 24 cm diameter toilet and extend the dough. We reserve in the fridge both the cake and the excess mass to continue with the French apple cake recipe.
