Ingredients to make chocolate crepes:
1. Beat the eggs with electric rods so that they are more spongy.
2. Add the milk and continue beating. To make chocolate crepes we can use any type of milk, even vegetable. For the latter case, we recommend opting for oat milk, soy milk or almond milk due to the combination of these flavors with cocoa.
3. We incorporate the sugar and integrate. We can continue using the electric rods, since we will have the dough ready before. Likewise, we can use both white sugar and brown sugar or panela, although it is true that unrefined versions are much healthier.
Trick: The amount of sugar is to taste, so you can add more or less.
4. Add the sifted flour in case of using common wheat flour. If we opted for integral flour, we add it directly because we will not be able to sift it. To avoid leaving the kitchen full of flour when making the dough of homemade chocolate crepes, we recommend integrating this ingredient with a spatula or manual rods.
5. Finally, we add pure cocoa. We tried the dough to check if the taste of chocolate crepes is to our liking or, otherwise, we consider that we have to add more cocoa or more sugar. Once ready, cover with film paper and let it rest in the refrigerator an hour. If we don have so much time, we can leave it half an hour.
6. After the rest time, we put a pan to heat with a few drops of olive oil. Once hot, add half a bucket of dough to start forming chocolate crepes. The final amount will depend on whether we like more or less thick, so we recommend experimenting and trying.
7. When we observe that the dough bubbles, we turn it carefully so that it is cooked on the other side. Homemade crepes become very fast, so we must be very attentive to prevent them from burning. In general, with a couple of minutes on the one hand and one minute (or less) on the other, they have more than enough.
8. We serve the chocolate crepe recipe stuffed with what we like most, such as fruit, molten white chocolate, yogurt …, the possibilities are endless! We have opted for banana and white chocolate, but if you prefer a healthier option you can leave only the fruit.
