Ingredients to make cheese and honey cake:
1. Before starting, we preheat the oven at 180ºC. Done this, we crush the butter cookies until they are completely pulverize. For the cookies I have used the Sablés Diamant à la Vanille following the recipe of Pierre Hermé, but you can use the ones you want.
2. Mix the sprayed cookies with the butter to form a homogeneous paste. We distribute this dough throughout the base of a round mold, about 18 cm in diameter. To make it easier to mix these ingredients, butter must be at room temperature.
3. We take a bowl and beat the eggs with honey, cream cheese, mascarpone, half-lemon juice and a pinch of salt. When all the ingredients are well integrated, we pour the mixture on the mold with the cookie base and bake the cake for 45-55 minutes.
4. When ready, we remove it from the oven, let cool and unmold. While cools, we prepare a little honey infused with the rosemary.
