Catalan cream recipe with Thermomix

Ingredients to make Catalan cream with Thermomix:
7½ milk buckets
6 units of egg yolks.

Ingredients to make Catalan cream with Thermomix:

1. Put in the Thermomix glass, very dry, sugar and lemon peel. Cover, close and cover with the Cubilete.

2. Then, work progressively at speeds 5-6-7. When it is well glazed, the cubilete is removed and only 5 milk cubiletes are added by the mouth, the yolks and the starch or cornstarch.

3. Cover the glass with the strainer and program at speed 1, 100ºC of temperature and 10 minutes. A couple of minutes before the end of the total scheduled time, incorporate the remaining milk through the strainer.

4. Time finished, it is allowed to turn a couple of minutes without temperature to prevent the cream from cutting. It is served in individual containers and allowed to cool to taste. Remember that the Catalan cream is eaten with burned sugar on top.
